Strawberries and Cream Cake
This is a great cake to make with fresh strawberries, cream, strawberry
sauce and whipped cream!

you will need:
- 2 3/4cups cake flour
- 2 1/2 teaspoons baking powder
- 2 cups white sugar
- 1 (3 ounce) package strawberry flavored gelatin
- 1 cup butter, softened
- 4 eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup strawberries, pureed
- 1 1/2 cups heavy cream
- 2 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1 1/2 cups fresh strawberries, sliced
- 1/2 cup margarine, softened
- 1 (8 ounce) package cream cheese, softened
- 4 cups confectioners' sugar
- 2 teaspoons vanilla extract
- 1 1/2 cups quartered strawberries
Step 1
Preheat oven to 350 degrees F,
Grease and flour three 9 inch round cake pans.
Step 2
Get a large bowl and beat
together the sugar, gelatin and butter until its fluffy. Add in the eggs but
one at a time and beat well after each egg. Mix in the flour and baking powder
and beat alternately with the milk into the sugar mixture. Now fold in 1
teaspoon vanilla and pureed strawberries.
Step 3
Divide this mixture equally into
the three 9 inch round cake pans.
Step 4
Bake for 25 minutes in the oven.
To see if it is done stick a toothpick in the middle of the cake and see if the
toothpick comes out clean. When done, take them out and let them cool for a
good ten minutes and then you can take them out of the pan and let them cool
some more.
Step 5
To make the filling, first beat
the whipping cream, 2 tablespoons sugar and 1/2 teaspoon vanilla on high until
stiff. Fill each layer of cake with 1/3 of the whipped cream and 3/4 cup sliced
strawberries.
Step 6
To make the frosting, you beat
the margarine, cream cheese, confectioners' sugar, and vanilla until creamy.
Spread this frosting over the sides of the cake, and a little on the edge
around the top of the cake.
Step 7
Spread the remaining whipped
cream on the top of the cake. Top with quartered strawberries.
